lunch


Spring hits and all I want to eat are salads. Until September. I've posted several salad recipes here, here, and here, as well as a guest post on The Haystack Needle. Can't get enough.

This one is absolutely delicious. I know I say that about all of them, but it is.

Colorful Spring Salad

Ingredients

Baby spinach
Red bell pepper
Yellow bell pepper
String beans
Avocado
White beans
Fresh mozzarella
Fresh lemon juice
Olive oil
Fresh ground pepper

Directions


Simply throw as much of each ingredient as you'd like in a bowl, add lemon juice, olive oil, and ground pepper to taste. I used dried white beans that I cooked and seasoned, but canned work just as well.


Yum. Delish and filling.
